I want to start with a picture that changes how a lot of my patients in Cottage Grove think about their health.


Picture a tree. What holds it up, and what keeps it alive? The roots. Down in the soil, a tree's roots are constantly pulling up water and nutrients, and every leaf, branch, and piece of fruit depends on what those roots take in. A tree with starved roots doesn't fail all at once. It just slowly stops thriving — thinner leaves, weaker branches, less fruit.


Your body works the same way. Everything you build — your energy, your focus, your immune system, your ability to repair and recover — is built out of the nutrients you take in. You are, in a very real sense, made out of what you absorb.


So when someone comes to me exhausted, foggy, and run down, one of the first root-cause questions I ask is deceptively simple: are you actually feeding your roots?


For a surprising number of people, the honest answer is no. Not because they aren't eating enough — but because of what they're eating. And that's the gap I want to talk about this week.


"Enough Food" and "Enough Nutrition" Are Not the Same Thing


Here's one of the strangest features of modern health: you can be overfed and undernourished at the same time.


You can eat plenty of calories — feel full, even gain weight — and still leave your body starved for the actual raw materials it needs to function. Full stomach, starved roots.


How does that happen? In large part, it comes down to the difference between whole foods and processed foods. And this is the part that isn't scientifically controversial at all: processing changes food, and much of what it changes, it takes away.


What Processing Actually Does to Your Food


When we talk about whole foods vs processed foods, the differences go far deeper than most people realize. Let's be concrete about what actually happens when whole food becomes ultra-processed food.


Processing strips nutrients out. Take a whole grain of wheat. In its whole form, it carries fiber, B vitamins, vitamin E, minerals, and healthy fats concentrated in the bran and germ. Refine it into white flour and much of that is removed — which is exactly why refined flours are so often "enriched": manufacturers add back a handful of synthetic nutrients precisely because processing took the natural ones out. That word on the label — "enriched" — is a quiet admission that something was lost first.


Processing removes fiber. Fiber isn't just about digestion. It slows how fast sugar hits your bloodstream, feeds the beneficial bacteria in your gut, and helps you feel genuinely full. Processing routinely strips it out, which is a big reason processed foods spike your blood sugar and leave you hungry again an hour later.


Processing adds things your body didn't ask for. Refined sugars, refined oils, sodium, artificial colors, preservatives, and additives designed to make food shelf-stable and hard to stop eating. So you're not just getting less of what your body needs — you're getting more of what burdens it.


Processing concentrates calories and dilutes nutrition. The result is "empty calories": food that delivers energy with very little of the vitamins, minerals, and fiber that should come along for the ride. Lots of fuel, little of the good stuff.


Put those together and you get the modern paradox: plenty of food, not enough nourishment. Full roots-system, starved tree.


What "Nutrient Dense" Really Means


The opposite of empty calories is nutrient density — how much real nutrition a food delivers relative to its calories.


Whole foods tend to be nutrient dense. A vegetable, a piece of fruit, an egg, a piece of fish, a handful of nuts, a whole grain — these come packaged by nature with their vitamins, minerals, fiber, and other compounds intact and working together. Nature tends to bundle nutrients in combinations that help your body actually use them.


When I talk with patients about eating for their roots, this is the heart of it. It's not about a fad diet or counting every calorie. It's about a simple, powerful shift:


  • Choose whole foods over processed ones

  • Choose foods that look close to how they grew

  • Choose organic and natural options where you can, to reduce the added chemical burden your body has to deal with

  • Build meals around foods that come with nutrition built in, not sprayed back on after the fact


Eat closer to the earth, and you feed your roots.


But Here's the Catch: You Have to Absorb It, Too


Eating whole foods is a strong foundation, but the body still has to break down, absorb, and actually use those nutrients. Now, this is where my approach differs from a generic "just eat healthy" article — because eating well is necessary, but it isn't always sufficient.


You can eat a beautiful, whole-foods, nutrient-dense diet and still not get the benefit if your body can't properly break down and absorb what you're giving it. Poor digestion, gut dysfunction, low stomach acid, missing enzymes, chronic stress — any of these can leave nutrients passing right through you.


This is the holistic, whole-person view. A tree with healthy roots in poor soil struggles. A tree with everything available but damaged roots struggles too. To thrive, you need both: good nutrients coming in, and a body that can actually take them up.

  • Shop the perimeter. The outer edges of the grocery store are usually where the whole foods live — produce, meat, eggs, dairy. The deeper aisles tend to hold the processed ones.


  • Read one thing on the label: the ingredient list. If it's long, full of words you can't pronounce, or led by sugar and refined oils, it's more processed than you want most of the time.


  • Choose "close to the earth." An apple over apple-flavored anything. Oats over the sugary cereal. Real food over its lookalike.


  • Upgrade where you can. Organic and natural options reduce the added burden your body has to filter out.


  • Don't aim for perfect — aim for better, most of the time. Consistency beats perfection.
